My boys beg for these delicious puffy oven pancakes often. And lucky me, they are so simple to make!
I can grind my beans while the eggs and flour are whirling around the blender. And the ingredients are usually on hand.
Preheat oven to 400 degrees
3 Tbs Unsalted Butter
3 Large Eggs
3/4 C. Milk
3/4 C. Flour
1 tsp pure vanilla extract
2 Tbs freshly squeeze lemon juice (opt)
1/4 C. Sugar + 1 TBS for top
Pinch of salt
1/2 C. blueberries
1/2 C. chopped apples + 1 tsp cinnamon
Melt 2 Tbs butter in hot oven in pan. I prefer cast iron. Set aside when melted.
Mix all ingredients except 1 Tbs butter and the 1 Tbs sugar.
Use a blender to mix it all together.
Pour mixture in the pan. Do not mix melted butter with your mixture.
Cook for 20 minutes or until lightly brown. Squeeze a little more lemon juice over the top if you desire. Top with pats of butter and sprinkle with sugar. Eat while it’s warm! Enjoy!
